Champagne Drappier

Drappier is a Champagne producer based in the Urville region of Champagne. The house, founded in 1808, produces both vintage and non-vintage cuvee as well as a prestige wine known as Grande Sendrée. Drappier is considered one of the finest boutique champagne producers in the world. The cellars in which the wine is stored are among the oldest and most extensive in Europe, and were the only cellars that were not damaged during the two world wars or the fires that raced through the area in the 1950s. Drappier is known for using significantly less sulfur in their wine than many other Champagne producers. One of their cuvées, the Brut Nature Non Dosé Sans Soufre, contains no added sulfur whatsoever.

The lush agricultural area of Champagne, of course now popular for its eponymous sparkling wines. The drink called Champagne, however, did not originate from the area – legend has it that monks (and the methods used to make this sparkling wine) actually brought it from Languedoc in the south of France all the way to this region to the east of Paris. These artisans also found that the terroir – specifically the chalky soil of Champagne – produced a brighter, fresher bubbly that was better than it used to be in Languedoc. French law states that Champagne can only be used to name wines from this particular region, according to the AOC. The legally defined wine producing sub-regions within the area are Aube, Côte des Blancs, Côte de Sézanne, Montagne de Reims, and Vallée de la Marne.
