It has aromas of blueberry jam, sweet blackberry compote, black cherries, red berries, as well as hints of minerality and a touch of pepper. The palate expresses bold fruits, as well as pleasant notes of tarry earthen minerality and delicate fine grainy tannins that lead into a long and delectable finish. When young Colombier Rouge from Domaine du Colombier is crunchy and zippy, it softens and mellows with extended aging. Pairs perfectly with rich meat dishes such as cassoulet or beef short ribs.
